Homemade tomato sauce

I decided to try making homemade tomato sauce for the first time today with the fresh produce we got at Carpinito Brothers yesterday. I used bits and pieces of several different recipes I found online. I basically roasted the tomatoes, onion and garlic in the oven four about 45 mins. Then I needed to put it all in the food processor. I really should have strained the juices out of the tomatoes first. I learned something new about my Cuisinart food processor today (which I've had for about 8 years now). Pay attention to the liquid fill line markings on the side! I started by putting too much of the roasted potatoes into the food processor and not only was the sauce too watery but it started coming out of the top of the processor! So I strained the rest of the tomatoes and processed them in 2 batches. I added fresh basil in the processor too.

We'll test the sauce out tonight with dinner but so far I think it tastes pretty good! I did some calculations and I think it cost me $8.77 to make all the sauce. That turns out to be $0.175/oz. Not bad for an all natural sauce without any preservatives! I put it into glass jars and will see how well it freezes. Can't wait to use it all fall/winter long!
